"Cheesy" Roasted Broccoli

  • Broccoli
  • Avocado Oil
  • Pink Himalayan Sea Salt
  • Nutritional Yeast


  • Preheat oven to 425 degrees
  • Roughly chop broccoli into same size pieces (i like to remove most of the stem)
  • Clean and dry broccoli (i use my salad spinner and blot with a paper towel to remove as much water as possible)
  • Place 1/2 of broccoli in a large mixing bowl and drizzle with 1-2 tbsp of avocado oil. Sprinkle with 1tsp of salt and shake nutritional yeast on top (coating generously). Toss to coat evenly
  • Add the remaining broccoli and repeat the same process with the oil, salt and yeast.
  • Spread in a single layer on a baking sheet, make sure pieces are not touching (cook in two batches if necessary)
  • Place in oven and bake for 20 minutes. Remove and toss.
  • Bake for another 10-15 minutes until all edges are desired level of brown
  • Remove from oven and let cool on baking sheet before storing. Eat leftovers cold or reheat in oven or in a skillet
