Preheat oven to 425 degrees
Roughly chop broccoli into same size pieces (i like to remove most of the stem)
Clean and dry broccoli (i use my salad spinner and blot with a paper towel to remove as much water as possible)
Place 1/2 of broccoli in a large mixing bowl and drizzle with 1-2 tbsp of avocado oil. Sprinkle with 1tsp of salt and shake nutritional yeast on top (coating generously). Toss to coat evenly
Add the remaining broccoli and repeat the same process with the oil, salt and yeast.
Spread in a single layer on a baking sheet, make sure pieces are not touching (cook in two batches if necessary)
Place in oven and bake for 20 minutes. Remove and toss.
Bake for another 10-15 minutes until all edges are desired level of brown
Remove from oven and let cool on baking sheet before storing. Eat leftovers cold or reheat in oven or in a skillet
